Ingredients

  • 2 overripe bananas, mashed
  • 3/4 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp Salt
  • 1/2 cup coconut oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 + 1/4 cup flour all purpose, wheat, 1-1 gluten free will all work
  • 1 tsp baking soda
  • chocolate optional

Instructions

  1. Preheat oven 350F + line muffin cups or oil them

  2. In large bowl combine bananas, sugar, cinnamon, salt – bring in the eggs, oil and vanilla.

  3. Fold in the flour and baking soda

  4. pour batter evenly into each muffin pocket

  5. Bake for about 20 minutes or until toothpick comes out clean!
