Ingredients

  • 1/4 cup coconut oil, soft not melted!
  • 1 cup pure cane sugar
  • 1 large egg
  • 3 medium ripe bananas
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup mini dark chocolate chips for the top

Instructions

  1. Preheat oven 350F and grease cast iron with butter. Mix the coconut oil and sugar until crumbly. Add in the egg, bananas, and vanilla. In a separate bowl, whisk flour, baking soda, and salt – then bring together and fold in chocolate chips. Transfer to cast-iron and sprinkle with the mini chocolate chips. Bake for about 25-27 minutes!

  2. Alternatives:

    .• pure cane sugar: regular sugar or coconut sugar

    .• all-purpose flour: wheat, gluten free, or almond flour would work

    .• egg: if you’re vegan feel free to use a flax egg (1tbsp flaxseed meal + 2.5 tbsp water)
