Pesto Breakfast Poppers

Ingredients

  • 3 eggs
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • pinch salt
  • pesto swirled in last

Instructions

  1. Mix eggs, flour, baking powder and salt until fully combined then fold in spinach. I used a cookie scooper to transfer over the mixture into the mini muffin pan (make sure to line with cupcake lines or parchment paper) and lastly place a dollop of pesto on top of each mini muffin and swirl with a toothpick or whatever you have on hand! Bake at 350F for about 15 minutes. Enjoy!
