Butternut Squash Biscuits

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup roasted butternut squash
  • 1 tsp rosemary
  • 1/2 tsp basil
  • 1/2 cup parmesan cheese
  • egg wash for the tops


  • 1 stick butter
  • 1 tbsp Fresh fennel, chopped
  • 1 clove garlic, minced
  • lemon zest


  1. preheat oven 400F and line baking sheet with parchment paper

  2. Chop butternut squash into cubes and pop into the oven for 30-40 minutes

  3. Once done, scrape off any skin you see and mash with a fork

  4. Sift together all dry ingredients (except for the parm) and then use your hands to mix in the mashed butternut squash

  5. Once it’s a dough-like consistency fold in the parmesan cheese and roll into large balls

  6. Place on parchment paper (should make 5-6) and bake for 15 minutes!

  7. Top with the butter and enjoy!
