Cocoa Peanut Butter Rice Crispy Bars

Ingredients

Base

  • 2 cups organic cocoa rice crispies
  • 1/2 cup natural peanut butter or any nut butter
  • 1/2 cup maple syrup or honey

Middle

  • 1 cup mashed dates Warm them before mashing
  • 1 cup almond flour

Topping

  • chocolate
  • coconut oil

Instructions

  1. Mix base ingredients then press mixture lightly into a 8×8 dish lined with parchment paper – pop into the freezer

  2. Warm dates in the microwave for about 30 seconds – mash with a fork then add in almond flour. I combined the two with my hands.

  3. Once fully combined remove the dish from the freezer and lay the date mixture on top – press lightly until even across rice crispy base and place back into freezer

  4. Melt chocolate with 1 tsp coconut oil – once fully melted remove dish from freezer and spread chocolate layer evenly across top! Set back into the freezer for at least 40 minutes before cutting

  5. Store in airtight container in fridge
