Fall Sheet Pan Meal

Ingredients

  • 1/2 medium zucchini, chopped
  • 1/2 medium eggplant, chopped
  • 1 medium sweet potato, chopped
  • 1/2 onion, chopped
  • 1/2 large head broccoli florets
  • handful min peppers, halved
  • 1/2 bag shredded Brussels sprouts
  • olive oil
  • garlic and herb seasoning

Instructions

  1. Toss all ingredients in a large bowl – be generous with both olive oil and seasoning

  2. Transfer to a baking sheet lined with parchment paper

  3. Pop into the oven preheated to 400F for about 20 minutes or until nice and crispy!

  4. Serve with rice, noodles, or quinoa
