Pumpkin Chocolate Chip Cookies

  • 2.5 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup starfine foods shortening (plant-based) or sub in coconut oil
  • 3/4 cup brown sugar
  • 1/4 cup pure can sugar
  • 2 eggs
  • 1/3 cup pumpkin purée
  • 1 tsp vanilla
  • 1 cup chocolate chips


  1. Preheat oven 350F and line baking sheet with parchment paper

  2. In medium bowl, whisk flour, baking soda and salt. Set aside.

  3. With electric mixer beat shortening and sugars on medium speed until fluffy. Then add in eggs, pumpkin and vanilla until fully combined. Add flour mixture (1/2 cup at a time) until combined.

  4. Fold in chocolate chips

  5. Use cookie scooper to transfer to baking sheet. Bake for about 10 minutes!

  6. Remove and let cool before handling- enjoy !
