Gluten Free S’more Blondies

  • 2 eggs or sub in flax eggs if vegan
  • 2/3 cup coconut sugar
  • 4 tbsp coconut oil
  • 4 tbsp almond butter
  • 1 tsp vanilla extract
  • 1.5 cups almond flour
  • 1 tsp baking soda
  • 2/3 cup Hu chocolate gems
  • 2/3 cup mini marshmallows
  • pinch salt


  1. preheat oven 350F and line 8×8 dish with parchment paper (or oil it)

  2. In small mixing bowl combined eggs, coconut sugar, almond butter, and vanilla extract – whisk with fork until everything is fully combined

  3. In separate bowl combined flour, baking soda, and salt.

  4. bring both wet and dry ingredients together then fold in the chocolate and marshmallows

  5. Bake for 20-25 minutes and enjoy right away or store in airtight container in fridge!
