Oatmeal Apple Bombs

Ingredients

  • 2 Ripe bananas, mashed
  • 1/2 cup creamy pecan butter or any nut butter
  • 1 tbsp coconut oil
  • 1 tbsp coconut sugar
  • 1 tbsp water
  • 1 tsp vanilla extract
  • 2 cups gluten free rolled oats
  • 1/4 cup fine almond flour
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • pinch salt
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped apple
  • 1 tbsp chia seeds optional

Instructions

  1. preheat oven 350F – line baking sheet with parchment paper

  2. Mix wet and dry ingredients separately then bring together

  3. Fold in chocolate chips, apple slices and chia seeds.

  4. Use a cookie scoop to transfer to lined baking sheet and pop into the oven for 12 minutes

  5. Eat right away or store in airtight container in the fridge
