Cacao Raspberry Swirl Muffins

Ingredients

  • 1 Pasture raised egg
  • 1/2 Cup Mashed banana
  • 1/4 Cup Coconut oil or butter
  • 1/4 Cup Maple Syrup
  • 1 + 1/2 Cup Oat flour (i blended rolled oats in my vitamix)
  • 1/2 Cup Almond flour
  • 3 Tbsp Raw Cacao powder
  • 1/4 Cup Coconut sugar
  • 2 tsp Baking powder
  • 1/2 Tsp Cinnamon
  • Pinch Salt
  • mini chocolate chips
  • About 1/2 Cup crushed raspberries

Instructions

  1. Preheat oven 350F and line cupcake sheet with parchment paper or spray with coconut oil

  2. Bring together wet and dry ingredients separately (do not mix in raspberry jam) then mix together until fully incorprorated.

  3. Fold in chocolate chips then scoop into muffin pan pockets to the top.

  4. Add a spoonful of your crushed raspberries (should be a jam-like texture) to the top of each muffin – swirl with a toothpick or chopstick!

  5. Place into the oven and let bake for about 20-23 minutes! Enjoy!
