Homemade Tomato Soup

Ingredients

  • 1 can diced tomatoes 15 ounces
  • 1/4 cup yellow onion, chopped
  • 1 small can tomato paste
  • 1 cup bone broth
  • 1 cup vegetable broth
  • 2 tbsp butter or ghee
  • 2 tsp garlic cloves, minced
  • 1/2 tsp sugar
  • 2-4 large basil leaves
  • 1 tsp oregano
  • 1 can coconut milk 15 ounces full fat
  • 1 tbsp red pepper flakes

Instructions

  1. Blend tomatoes, onion, and basil in a blender. Once done, transfer the purée to a pot adding in the tomato paste, broth, butter, sugar, garlic, red pepper flakes and oregano over low heat. Let simmer for 15 minutes. Gently stir in coconut milk and heat for another 5-10 minutes. Serve hot and garnish with whatever ya like
