Mini Upside Down Pineapple Muffins
- 1/2 Cup coconut oil, melted
- 1/2 cup pure cane sugar
- 1.5 cup all-purpose flour
- 2 tsp baking powder
- 1 egg
- 1/4 cup applesauce
- toasted coconut shreds
- Brown sugar to sprinkle in pan
Preheat oven 350F. Grease mini muffin pan and place about a 1/4 teaspoon brown sugar in bottom of each pocket.
then add a slice of pineapple into each compartment as well.
Mix oil and sugar until fully incorporated. Add egg and mix. Next add flour and baking powder along with applesauce on medium until blended.
Scoop batter into each muffin pocket and top with some toasted coconut.
Bake for 15-18 minutes!
