
Potato Stacks
Ingredients
- potatoes
- 1/2 cup butter
- 1/4 cup oregano, chopped
- 2 tbsp thyme, chopped
- 2 cloves garlic, grated
- 1/4 cup Shredded parmesan cheese
- 1/4 cup Shredded cheddar cheese
- salt + pepper to taste
Instructions

Wash potatoes and slice with a mandolin- I used about 4-5 (if you use smaller potatoes use about 10-13)

Add slices to a large bowl and toss in butter + spices

stack into muffin tin, cover with foil and pop into the oven at 400F for 30 minutes

Remove from oven + remove foil and place back into the oven until crispy brown!

Add more parmesan cheese to the top if you like! Enjoy
