Beet Soup

Ingredients

  • 2 Lbs Fresh beets, peeled and chopped
  • 3 Cups Organic vegetable broth
  • 2 Cups Bone broth
  • 1/2 Tsp Sea salt
  • 1/4 Tsp Pepper
  • 2 Tbsp Ghee
  • 1 Large Onion, sliced and diced
  • 1 Large Carrot, peeled and chopped
  • 2 Cloves Garlic, peeled and minced

Instructions

  1. Place beets in large stock pot with vegetable broth, bone broth, salt & pepper

  2. Cover and cook for 45 minutes 

  3. Around the 25 minute mark in a large skillet begin to sauté your onions and carrots in the ghee – make sure to constantly stir until soft

  4. Once done add to beets and broth with the garlic – stir and let cool off a little

  5. Transfer to blender and mix into a purée 

  6. Some topping ideas: Greek yogurt, sour cream, hemp hearts, toast, micro greens, spinach 

  7. Enjoy!
