
Beet Soup
Ingredients
- 2 Lbs Fresh beets, peeled and chopped
- 3 Cups Organic vegetable broth
- 2 Cups Bone broth
- 1/2 Tsp Sea salt
- 1/4 Tsp Pepper
- 2 Tbsp Ghee
- 1 Large Onion, sliced and diced
- 1 Large Carrot, peeled and chopped
- 2 Cloves Garlic, peeled and minced
Instructions

Place beets in large stock pot with vegetable broth, bone broth, salt & pepper

Cover and cook for 45 minutes

Around the 25 minute mark in a large skillet begin to sauté your onions and carrots in the ghee – make sure to constantly stir until soft

Once done add to beets and broth with the garlic – stir and let cool off a little

Transfer to blender and mix into a purée

Some topping ideas: Greek yogurt, sour cream, hemp hearts, toast, micro greens, spinach
