Blueberry Banana Bread Muffins

Ingredients

WET

  • 3 Ripe bananas
  • 3 Cage free eggs Or you can do flax eggs
  • 1/3 Cup Almond milk Or any nut milk
  • 1/4 Cup Coconut oil, melted and cooled
  • 1 Tbsp Pure maple syrup

DRY

  • 1/2 Cup Gluten free flour Or oat flour or all-purpose flour
  • 2 Tbsp Coconut sugar
  • 2 Tsp Baking powder
  • 1 Tsp Cinnamon

TOPPING

  • GF rolled oats
  • Brown sugar
  • Ghee
  • Blueberries

Instructions

  1. Preheat oven 350F – spray muffin tins with coconut oil

  2. Combine wet and dry ingredients in separate bowls, then fold one into the other 

  3. Pour batter into muffin tins half full 

  4. For the topping I melted about 2 tbsp ghee and mixed it with rolled oats and brown sugar until everything was fully combined – I then sprinkled this mixture on top of each muffin along with 3 blueberries

  5. Bake for 15-20 minutes or until a toothpick comes out clean
