Preheat oven 350F – line cookie sheets with parchment paper. Mix together dry and wet ingredients separately then combine (using a mixer helps). Once smooth fold in chocolate chips. Put cookie dough in the fridge for 30 minutes while waiting for oven to preheat (this helps the coconut oil set) then scoop into balls and place on tray. Bake about 3 inches apart for 10-12 minutes! Remove from oven and sprinkle with the flakey sea salt – let cool on the baking tray before moving.
