Chocolate Chip Zucchini Oat Cookies

Ingredients

  • 1/4 cup coconut oil melted then cooled
  • 1/2 cup brown sugar
  • 1/4 cup coocnut sugar
  • 1 large cage free egg
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • 1 cup gluten free flour or all-purpose flour or almond flour
  • 2 cups rolled oats
  • 3/4 cup dark chocolate chips
  • 1/2 cup toasted coconut shreds

Instructions

  1. Preheat oven 350F and line baking sheet with parchment paper

  2. Mix coconut oil, brown sugar, and coconut sugar together

  3. Add egg, vanilla extract, and shredded zucchini

  4. Then pour your dry ingredients and mix until fully combined!

  5. Fold in chips and coconut shreds

  6. Bake for 10-12 minutes
