Coconut Curry Broccoli Soup

Ingredients

  • 2 Large Bunches of broccoli
  • 3 Tbsp Avocado oil Olive oil or coconut oil work too
  • 1 Large Onion
  • 1 Jalapeño pepper, seeded and minced
  • 4 Cloves Garlic, minced
  • 2 Tbsp Fresh ginger, minced You can use powdered ginger too
  • 4 Cups Organic vegetable stock
  • 1 Tbsp Curry powder
  • 1 Tbsp Red curry paste
  • 1 Tsp Turmeric powder
  • 1/2 Tsp Cumin
  • 1 15oz can Coconut milk

Instructions

  1. Heat oil in your soup pot – add the onions and jalapeño 

  2. Sauté until onions are golden

  3. Add garlic and ginger – sauté for another few minutes 

  4. Add broccoli and heat through

  5. Add the vegetable broth and bring to a boil, then lower the heat to simmer

  6. Stir in all spices and paste

  7. Place lid on the soup and let simmer for 20 minutes!

  8. Remove from heat then pour in coconut milk – stir thoroughly 

  9. Enjoy!
