Curry Cauliflower over Coconut Lime Rice

Curry Cauliflower

  • 1 Tbsp Olive oil
  • 1 Yellow onion, chopped
  • 3 Cloves Garlic, minced
  • 1 Tbsp Fresh ginger, minced
  • 2 Tbsp Yellow curry powder
  • 1 Tsp Cinnamon
  • 1 Tsp Cumin
  • 1 14oz can Diced tomatoes
  • 2 14oz cans Coconut milk
  • 1 Large Head cauliflower, cut into large florets

Coconut Lime Rice

  • 1 Tsp Coconut oil
  • 1 Cup White jasmine or basmati rice
  • 1 14oz can Coconut milk
  • Zest Of one lime
  • Juice Of half a lime
  • Salt to taste


Curry Cauliflower

  1. In a medium sized pot heat olive oil over medium heat

  2. Add in onions – sauté until translucent 

  3. Add in garlic and fresh ginger – sauté for another 2 minutes

  4. Add in curry, cinnamon, cumin and diced tomatoes- stir until fully combined

  5. Slowly stir in coconut milk and bring to a simmer – let simmer for 5 minutes stirring often.

  6. If you have a immersion blender you can use that but if not (like me) you’re going to pour this mixture into a blender – blend until smooth!

  7. Bring the soup back to a low simmer – add your cauliflower florets 

  8. Simmer your cauliflower until tender – about 20 minutes

Coconut Lime Rice

  1. While waiting for cauliflower to tenderize in a small pan over medium heat, sauté rice in the coconut oil for 1 minute

  2. Pour in the can of coconut milk and a dash of water then add lime zest and juice – stir to combine fully

  3. Simmer the rice covered for about 20 minutes or until cooked through

  4. Once everything is done use your rice for the base and place your curry cauliflower on top! Enjoy!
