- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup chopped walnuts
- 1 1/2 tsp baking powder
- 1 tsp pumpkin pie spice
- 2 tbsp melted coconut oil
- 1 large cage free egg sub in a mashed banana if vegan
- 1 tsp vanilla extract
- 3 tbsp maple syrup
- 2 medium grated carrots
In medium bowl stir together oats, flour, walnuts, baking powder, cinnamon, and pumpkin pie spice.
In separate bowl - whisk together coconut oil, egg, maple syrup, and vanilla.
Add liquid mixture to the flour mixture, and fold in carrots.
Chill dough for 30 minutes.
Preheat oven 325F, line baking sheet with parchment paper.
Drop dough into 10-12 scoops on the baking sheet and flatten - bake for 12 minutes!
