Ingredients

Flourless Chocolate Coconut Cookies

  • 1 Cage free egg Sub in flax egg if vegan (1 tbsp flaxseed + 2 1/2 tbsp water)
  • 1/3 Cup Organic coconut sugar
  • 1 Cup Natural almond butter
  • 2 Tbsp Nut milk
  • 1 Tsp Vanilla extract
  • 1/2 Tsp Baking powder
  • 1/4 Cup Coconut shreds
  • 1/2 Cup Chocolate chunks

Caramel Date Drizzle:

  • 1/2 Cup Coconut cream
  • 1.5 Cup Pitted dates, or date syrup
  • Dash Vanilla extract
  • Pinch Cinnamon

Instructions

  1. Preheat oven 350F – lime baking sheet(s) with parchment paper 

  2. Mix together your egg, sugar, almond butter, nut milk, vanilla extract, and baking powder

  3. Fold in coconut and chocolate

  4. Scoop tiny balls on baking sheet – should make about 12-14

  5. Bake for 10 minutes

  6. Remove and druzzle with sauce!
