Gingersnap Pillow Cookies

Ingredients

DRY

  • 2 cups almond flour
  • 2 overly ripe bananas
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp gingersnap spice
  • lots of cinnamon

WET

  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 2.5 tbsp blackstrap molasses

Instructions

  1. Set oven 350F - line baking sheet with parchment paper

  2. In a bowl mash bananas and add all other wet ingredients. In separate bowl mix together all dry ingredients.

  3. Combine both and scoop onto pan. Bake for 15(ish) minutes.

  4. You can use coconut greek yogurt or coconut oil mixed with confectioners sugar as a topping. Enjoy!
