Gluten Free Peanut Butter Chocolate Bites

Ingredients

PB Filling

  • 1/2 Cup Natural peanut butter
  • 2 Tbsp Maple syrup
  • 2 Tbsp Melted organic coconut oil
  • 1 Tsp Vanilla extract
  • 9 Tbsp Almond flour

Chocolate

  • 1 Tbsp Coconut oil
  • 1 Dark chocolate bar or about a 1/2 cup choc chips
  • Crushed peanuts Topping
  • Cacao nibs Topping
  • Pink salt Topping

Instructions

  1. Whisk together peanut butter filling ingredients

  2. Form dough into small, 1-inch balls and place on baking sheet lined with parchment paper 

  3. Place in freezer for 10 minutes

  4. Melt coconut oil and chocolate over medium heat in stove top 

  5. Remove peanut butter balls from freezer and dip into chocolate using two forks – place back in parchment paper 

  6. Sprinkle with whatever toppings you like

  7. Place back in freezer for 20 minutes before serving. Enjoy!
