Gluten Free Toasted Coconut Blondies

Ingredients

  • 2 Cage free organic eggs
  • 2/3 Cup Organic coconut sugar
  • 4 Tbsp Coconut oil
  • 1 Tsp Vanilla extract
  • 4 Tbsp Cashew butter Or any nut butter
  • 1 Tsp Baking powder
  • 1.5 Cup Almond flour
  • 1/4 Cup Finely chopped toasted coconut flakes
  • Handful Dark chocolate chips Optional
  • Dash Salt

Instructions

  1. Preheat oven 350F – grease oven safe dish (8×8) then set aside

  2. Mix all ingredients in the order above – I find this helps 

  3. Scoop batter into baking dish and make sure it’s evenly distributed 

  4. Pop in the oven for about 9 minutes but thoroughly check throughout! If it’s over cooked it will be dry!

  5. As soon as you remove it from the oven top with another fine layer of finely chopped toasted coconut flakes

  6. Served best with vanilla ice cream – enjoy!
