Gluten-free Coconut Almond Cookies

Ingredients

  • 3/4 Cup Almond butter
  • 1 Tbsp Ghee Or butter
  • 1/4 Cup Coconut sugar
  • 1 Organic cage-free egg
  • 1 Tsp Vanilla extract
  • 2 Tbsp Coconut flour
  • 1/2 Tsp Baking soda
  • Handful Chopped almonds
  • Handful Shredded coconut

Instructions

  1. Preheat oven 350F – line baking sheet with parchment paper 

  2. Stir together almond butter, vanilla extract, egg and coconut sugar together

  3. Add dry ingredients until fully incorporated

  4. Form balls then place on sheet (should make 8-10) press them down with a fork lightly

  5. Bake 7 minutes
