  • 1 pasture raised egg Sub flax egg if vegan
  • 3 Cups Almond flour
  • 1/2 Tsp Baking powder
  • 1/2 Tsp Cinnamon
  • 1/2 Cup Cashew butter
  • 1/2 Cup Maple syrup

Cookie Coating

  • 1/4 Cup Coconut sugar
  • 1/2 Tsp Cinnamon


  1. Preheat oven 350F – line baking sheet with parchment paper

  2. Mix together all the wet ingredients then fold in the dry until fully combined

  3. In a small bowl, mix together the coconut sugar and cinnamon

  4. Begin to scoop out your batter with a cookie scooper – before placing on the cookie sheet toss the balls in the cinnamon and sugar mixture

  5. Once placed on cookie sheet lightly press down each cookie with the bottom of a glass

  6. Bake for 10 minutes. Enjoy as is or use as a fun ice cream sandwich!
