
Snickerdoodle Cookies
Ingredients
- 1 pasture raised egg Sub flax egg if vegan
- 3 Cups Almond flour
- 1/2 Tsp Baking powder
- 1/2 Tsp Cinnamon
- 1/2 Cup Cashew butter
- 1/2 Cup Maple syrup
Cookie Coating
- 1/4 Cup Coconut sugar
- 1/2 Tsp Cinnamon
Instructions

Preheat oven 350F – line baking sheet with parchment paper

Mix together all the wet ingredients then fold in the dry until fully combined

In a small bowl, mix together the coconut sugar and cinnamon

Begin to scoop out your batter with a cookie scooper – before placing on the cookie sheet toss the balls in the cinnamon and sugar mixture

Once placed on cookie sheet lightly press down each cookie with the bottom of a glass

Bake for 10 minutes. Enjoy as is or use as a fun ice cream sandwich!
