
Sweet Potato Breakfast Muffins
Ingredients
WET
- 1 Large Sweet Potato
- 2 Small Bananas
- 1 Tsp Vanilla extract
- 1 Cage free egg
DRY
- 1 Cup Gluten-free flour
- 1/2 Cup Oats
- 1 Tsp Cinnamon
- 1 Tbsp Flaxseed
- 1 Tsp Baking powder
- Pinch Nutmeg
- Pinch Ginger
- Handful Chopped pecans
Instructions

Bake your sweet potato in the oven at 400F for 30-40 minutes until completely soft

Remove the skin from the sweet potato and mash with fork – mix in all other wet ingredients

Fold in all dry ingredients

Once everything is fully combined distribute to the greased or lined muffin tins – bake for 15 minutes!
