Sweet Potato Breakfast Muffins

Ingredients

WET

  • 1 Large Sweet Potato
  • 2 Small Bananas
  • 1 Tsp Vanilla extract
  • 1 Cage free egg

DRY

  • 1 Cup Gluten-free flour
  • 1/2 Cup Oats
  • 1 Tsp Cinnamon
  • 1 Tbsp Flaxseed
  • 1 Tsp Baking powder
  • Pinch Nutmeg
  • Pinch Ginger
  • Handful Chopped pecans

Instructions

  1. Bake your sweet potato in the oven at 400F for 30-40 minutes until completely soft

  2. Remove the skin from the sweet potato and mash with fork – mix in all other wet ingredients 

  3. Fold in all dry ingredients 

  4. Once everything is fully combined distribute to the greased or lined muffin tins – bake for 15 minutes!
