Vegan Banana-Nut Muffins

Ingredients

DRY

  • 1 1/2 cup Bob's Red Mill organic gluten-free flour
  • 3/4 cup organic cane sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • dash chia seeds optional

WET

  • 2 ripened bananas - mashed
  • 3/4 cup plant-based milk
  • 1/4 cup coconut oil
  • 2 tbsp vanilla extract

Instructions

  1. Preheat oven 400 degrees

  2. Once all DRY & WET ingredients are mixed together mix in 1/2 cup pecans or walnuts 

  3. Pour into greased muffin pan with coconut oil

  4. Top with crushed pecans or walnuts for texture

  5. Bake for 22 minutes!
