Vegan a Cookie Dough Nice Cream

Ingredients

  • 1 cup medjool dates
  • 2 cups coconut cream chilled for at least 24 hours – you can use the thick part from the canned coconut milk or purchase cans of coconut cream
  • 2 medium ripe bananas i sliced and froze them 2 hours ahead of time
  • 2 tbsp smooth almond butter
  • 1 tsp vanilla extract
  • 1 vanilla bean pod scrape out the inside with a sharp knife
  • Emmys organic coconut chocolate chip cookies chopped

Instructions

  1. Add all ingredients except for cookie dough to a high speed blender until thick and creamy. Line a loaf pan with parchment paper and pour mixture into it. Dump your chopped coconut chocolate chip cookies into the ice cream and fold until evenly distributed. Cover tightly with foil and freeze for at least 4 hours before serving!
