Vegan/GF Peppermint Brownies

Ingredients

DRY

  • 1 cup gluten free flour
  • 1 1/4 cup coconut sugar or brown sugar
  • 1/2 cup cacao powder
  • 1 tbsp flaxseed
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt

WET

  • 1/2 cup unsweetened applesauce
  • 1/3 cup unsweetened almond milk
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup vegan dark chocolate chips

Instructions

  1. Preheat oven 350F – line 8×8 brownie pan with parchment paper

  2. Mix dry ingredients and wet ingredients separate – then combine 

  3. Fold in chocolate chips – transfer into brownie pan

  4. Bake for 25-30 minutes

  5. Let cool before cutting into squares. Enjoy!
