Vegan Gingerbread Balls

Ingredients

Gingerbread Balls:

  • 1 1/4 Cup Walnut pieces
  • 1 Cup Soft pitted dates
  • 1 Cup Gluten free oats
  • 2 Tbsp Cinnamon
  • 3 Tsp Ginger
  • 1 Tbsp Pure maple syrup
  • 2 Tbsp Blackstrap molasses

Outer Layer:

  • Dark chocolate bar
  • 1 Tbsp Coconut oil
  • Sea salt
  • Crushed graham crackers

Instructions

  1. Add the walnuts and oats to the food processor – mix until broken down

  2. Add the dates and continue to mix until it forms a dough

  3. Add the rest of the ingredients, besides the outer layer ingredients, mix well

  4. Remove from food processor and form small balls – place on cookie sheet lined with parchment paper 

  5. Once all balls are complete melt your chocolate and coconut oil together on stovetop 

  6. Use two forks to dip each ball (be sure to let any excess chocolate drip off before placing on sheet)

  7. Then top with sea salt and crushed graham crackers

  8. Place in freezer 30 minutes before serving (store in airtight container in freezer)
