Vegan & Gluten Free Chocolate Strawberry Cookies

Ingredients

  • 1 Flax egg 1 tbsp flaxseed + 2 1/2 tbsp water
  • 2 Tbsp Coconut oil, melted
  • 1/2 Tbsp Vanilla extract
  • 1/3 Cup Coconut sugar
  • 2 Tbsp Almond butter
  • 1/2 Tsp Baking soda
  • Pinch of salt
  • 1/3 Cup Freeze dried strawberries
  • 1/3 Cup Chocolate chunks (I used Hu Kitchen chocolate)

Instructions

  1. Preheat oven 350

  2. Mix flax egg, coconut oil, vanilla extract, coconut sugar, and almond butter in one bowl

  3. In another bowl mix almond flour, salt, and baking soda

  4. So lowly incorporate the dry mixture into the wet mixture – once fully combined continue to fold in dried strawberries and chocolate chunks

  5. Scoop out 9 cookies evenly on a lined baking sheet 

  6. Bake for 10 minutes! Once removed from the oven feel free to sprinkle more dried strawberries on top
