
Vegan Mac and Cheese
Ingredients
- 2 Cups Cauliflower florets
- 2 Cloves Garlic, minced
- Avocado oil
- 1 1/4 Cup Unsweetened almond milk
- 1 Cup Vegetable broth
- 1/2 Lemons juice
- 4 Tbsp Nutritional yeast
- Basil
- Thyme
- Salt/Pepper
- Red hot chili flakes
Instructions

In large sauce pan, add your cauliflower florets, garlic, and oil – sauté for 5 minutes

Once done sautéing add your almond milk, veggie broth, spices, and juice from half a lemon – cover and let simmer 20 minutes

While letting the sauce simmer begin to cook your Chickpea pasta noodles

Once 20 minutes is up for your sauce – transfer it into a blender, mix until fully combined

Pour the sauce over your pasta and add whatever seasoning you like to the top! I used everything but the bagel seasoning and red hot chili flakes. Enjoy!
