Vegan Mac and Cheese

Ingredients

  • 2 Cups Cauliflower florets
  • 2 Cloves Garlic, minced
  • Avocado oil
  • 1 1/4 Cup Unsweetened almond milk
  • 1 Cup Vegetable broth
  • 1/2 Lemons juice
  • 4 Tbsp Nutritional yeast
  • Basil
  • Thyme
  • Salt/Pepper
  • Red hot chili flakes

Instructions

  1. In large sauce pan, add your cauliflower florets, garlic, and oil – sauté for 5 minutes 

  2. Once done sautéing add your almond milk, veggie broth, spices, and juice from half a lemon – cover and let simmer 20 minutes 

  3. While letting the sauce simmer begin to cook your Chickpea pasta noodles

  4. Once 20 minutes is up for your sauce – transfer it into a blender, mix until fully combined 

  5. Pour the sauce over your pasta and add whatever seasoning you like to the top! I used everything but the bagel seasoning and red hot chili flakes. Enjoy!
