Vegan Pumpkin Pie Bites

Ingredients

  • 2 cup organic canned pumpkin puree
  • 1 cup unsweetened almond milk
  • 1/3 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp pumpkin pie spice
  • dash sea salt
  • store bought crust
  • almond milk whipped cream topping

Instructions

  1. preheat oven 350F

  2. throw all ingredients into mixer on medium speed until fully combined -set aside

  3. roll out your store bought crust and begin to carve out your mini round crusts - I use a regular glass to do this!

  4. place your crusts into the muffins tins and scoop 2 tbsp of filling into each

  5. bake for 30-35 minutes or until golden brown
