Vegan Turmeric Chickpea Soup

Ingredients

  • 2 Tbsp Avocado oil
  • 1 Cup Diced green pepper Or any color pepper
  • 1 Cup Diced yellow onion
  • 1 Cup Cubed sweet potato
  • 1 Clove Garlic, minced
  • 2 Tsp Turmeric powder
  • 1 Tsp Curry powder
  • 1/2 Tsp Pink salt
  • 1/2 Tsp Black pepper
  • 3 Cups Organic vegetable stock
  • 1 1/2 Cups Coconut milk 1 can
  • 1 Can Chickpeas, drained and rinsed
  • 3 Cups Spinach

Instructions

  1. Heat the oil in a medium-large stock pot

  2. Sauté the pepper, onion, and sweet potato on low-medium heat for 5 minutes. 

  3. Stir in garlic, all spices, vegetable stock, and coconut milk. 
  4. Bring everything to a boil and then reduce the heat and let simmer for 10 minutes.

  5. Throw in your chickpeas and spinach – let simmer for another 10 minutes 

  6. Enjoy!
