Zucchini Bread / Muffins

Ingredients

  • 2 Cage free organic eggs
  • 1 1/3 Cup Organic coconut sugar
  • 3/4 Cup Ghee, melted
  • 2 Tsp Vanilla extract
  • 3 Cups Fresh zucchini Packed and grated
  • 2 3/4 Cups Gluten free flour
  • 1 Tsp Baking powder
  • 2 Tsp Cinnamon
  • 1 Tsp Ground ginger
  • 1/2 Tsp Nutmeg
  • Walnuts
  • Chia seeds
  • Dark chocolate chips

Instructions

  1. Preheat oven 350F @0- line muffin pan 

  2. Mix eggs, sugar, vanilla, then add zucchini and melted ghee

  3. Fold in dry ingredients 

  4. Fill muffin tins about half way and top with whatever you like! If using a loaf pan fill a little more than half way!
