Ingredients

  • 15-20 fingerling potatoes, halved
  • 1 tbsp avocado oil or extra virgin olive oil
  • 1 tbsp chili onion crunch from Trader Joe’s
  • salt
  • pepper
  • oregano

For Dipping

  • Pesto But you can use whatever you like!

Instructions

  1. preheat oven 450F and line baking sheet with parchment paper

  2. Toss potatoes in oil + seasonings then lay flat on baking sheet

  3. Bake for about 30-40 minutes and flip halfway through

  4. Pair with pesto or any other homemade sauce/dip you love!
