
Sweet Potato Maple Muffins
Ingredients
- 1 can sweet potato purée
- 1/3 cup maple syrup or honey
- 1/4 cup vanilla greek yogurt
- 1 egg
- 2 tsp vanilla extract
- 1 + 2/3 cup all-purpose or whole wheat flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions

preheat oven 350F and line muffin pan with muffin liners

In a large mixing bowl combined all wet ingredients

Once fully incorporated add in the dry and gently mix – don’t over mix!

Scoop batter into muffin pan distributing evenly between the muffin cups

Bake for about 20 minutes or until toothpick comes out clean

Cool and top with cream cheese frosting. Enjoy!
