Vegan Buffalo Mac and Cheese
- 1 Box gluten free pasta I use Eat Banza
- 1 cup cashews, soaked and drained
- 1 tbsp nutritional yeast
- 1/2 cup buffalo sauce feel free to use your favorite!
- 3/4 Cup almond milk, unsweetened
- to taste Salt and pepper
- 1/2 Tsp garlic powder
- 1/2 tsp onion powder
- vegan butter
- red pepper flakes
- bread crumbs
To make the sauce soak cashews in boiling water for 10 minutes, drain and toss in a high powered blender with the remaining sauce ingredients. Set aside.
In a pan combine the buffalo sauce with the cooked pasta over medium heat to heat everything all the way through. Remove from heat and top with bread crumbs and chives (if desired) and pop into the oven for about 10 minutes!
