  • 5 eggs
  • 1 shallot, finely chopped
  • 1 small head broccoli, chopped
  • 1/2 can corn, drained
  • 1 large carrot, shredded
  • 2/3 cup Seasoned panko
  • salt+pepper to taste
  • olive oil for the pan


  1. mix chopped shallot, broccoli, carrot and corn- set aside

  2. Beat eggs with fork band then combined with veggies

  3. Add seasoning and polio – mix until fully incorporated

  4. Oil your pan over medium hear and plop down you veggie pancakes

  5. Let cook on each side for about 7 minutes or until golden brown
