
Veggie Pancakes
Ingredients
- 5 eggs
- 1 shallot, finely chopped
- 1 small head broccoli, chopped
- 1/2 can corn, drained
- 1 large carrot, shredded
- 2/3 cup Seasoned panko
- salt+pepper to taste
- olive oil for the pan
Instructions

mix chopped shallot, broccoli, carrot and corn- set aside

Beat eggs with fork band then combined with veggies

Add seasoning and polio – mix until fully incorporated

Oil your pan over medium hear and plop down you veggie pancakes

Let cook on each side for about 7 minutes or until golden brown
