Almond Flour Chocolate Chip Cookies

Ingredients

DRY

  • 2.5 cups almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • chocolate chunks I cut up a bar but you can use however many chocolate chips you want

WET

  • 1/2 cup coconut oil not fully melted
  • 3/4 cup pure cane sugar
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. in a medium bowl combined flour, salt, and baking soda - whisk

  2. In another bowl bring together coconut oil and sugar. Once fully incorporated + frothy add in the eggs and vanilla.

  3. Bring the wet and dry ingredients together and lastly, fold int he chocolate chips (however many you like!)

  4. Line baking sheet with parchment paper and lay out your cookie balls (I use a cookie scooper always)

  5. IMORTANT: let dough sit in the fridge for 30 minutes - 1 hour before popping into the oven! Why? It solidifies the fat in the cookie keeping their shape in-tact, giving it that amazing gooey texture

  6. Preheat oven to 350F while they sit in the fridge

  7. Remove from the fridge and pop into the oven for about 10 minutes.

  8. Let cool before removing from tray

  9. Enjoy!
