Oreo Dark Chocolate Cookies
- 1/2 cup coconut oil
- 1/4 cup brown sugar
- 1/4 cup coconut sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 + 1/3 cup all-purpose flour
- 1/3 cup melted dark chocolate chips
- 1/2 tsp baking soda
- 1/2 tsp salt
preheat oven 350F and line baking sheet with parchment paper
Melt coconut oil and add sugar. Mix until well-combined.
Stir in vanilla and egg and then fold in the flour and baking soda
Last add in the melted chocoate – fold until fully incorporated. It will take a bit to get everything mixed together well. Be patient!
Add in about 4-5 crushed gluten free Oreos and fold until evenly distributed throughout the batter
Transfer to baking sheet using a cookie scoop and pop in the oven for about 10 minutes!
