Vegan Turmeric Chickpea Soup
- 2 Tbsp Avocado oil
- 1 Cup Diced green pepper Or any color pepper
- 1 Cup Diced yellow onion
- 1 Cup Cubed sweet potato
- 1 Clove Garlic, minced
- 2 Tsp Turmeric powder
- 1 Tsp Curry powder
- 1/2 Tsp Pink salt
- 1/2 Tsp Black pepper
- 3 Cups Organic vegetable stock
- 1 1/2 Cups Coconut milk 1 can
- 1 Can Chickpeas, drained and rinsed
- 3 Cups Spinach
Heat the oil in a medium-large stock pot
Sauté the pepper, onion, and sweet potato on low-medium heat for 5 minutes.
Stir in garlic, all spices, vegetable stock, and coconut milk.
Bring everything to a boil and then reduce the heat and let simmer for 10 minutes.
Throw in your chickpeas and spinach – let simmer for another 10 minutes
